Ingredients

  • 1/2 cup white or apple cider vinegar
  • 2 tbsp fresh herbs (parsley, basil, or dill), chopped
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2-3 tbsp water (to dilute)

Instructions

  • Add vinegar to a glass jar or mixing bowl.
  • Add chopped herbs, minced garlic, and Dijon mustard.
  • Season with salt and black pepper.
  • Add water to adjust acidity and taste.
  • Shake or whisk vigorously until well combined.
  • Let sit for at least 30 minutes before serving for best flavor.

Notes

Let dressing rest at least 30 minutes (or overnight) for best flavor. If too acidic, dilute with water or add a pinch of sweetener. Store in glass containers for up to 2 weeks depending on ingredients. Shake well before serving.
