Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (2-3 bananas)
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or walnuts (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • Whisk melted butter and brown sugar until smooth, then add egg and vanilla extract and mix well.
  • Mash bananas and stir into the butter mixture until combined.
  • In a separate bowl, mix flour, baking powder, baking soda, and salt.
  • Fold dry ingredients into wet mixture until just combined. Do not overmix.
  • Fold in optional mix-ins like chocolate chips or nuts.
  • Spread batter evenly in the prepared pan and bake for 25–30 minutes until edges are golden and center is slightly soft.
  • Cool for at least 30 minutes before slicing into bars and serving.

Notes

Do not overbake for best texture—centers should remain slightly soft. Use very ripe bananas for maximum flavor. Store in an airtight container for up to 3 days or refrigerate up to 1 week.
