These banana blondies combine the chewy richness of classic blondies with the sweet, comforting flavor of ripe bananas. With crisp edges and a soft, gooey center, they’re an easy and delicious way to use overripe bananas.
Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
Whisk melted butter and brown sugar until smooth, then add egg and vanilla extract and mix well.
Mash bananas and stir into the butter mixture until combined.
In a separate bowl, mix flour, baking powder, baking soda, and salt.
Fold dry ingredients into wet mixture until just combined. Do not overmix.
