Equipment

  • Mixing bowl – For blooming gelatin
  • Measuring cups – Liquid and dry
  • Whisk or spoon – To dissolve gelatin
  • Glass jars or silicone molds – For portioning
  • Kettle – To heat water
  • Refrigerator – To chill and set the jello

Ingredients

  • 2 tbsp Grass-fed gelatin powder Unflavored collagen-rich
  • ½ cup Cold filtered water For blooming gelatin
  • cups Hot water Just below boiling
  • ¾ cup Unsweetened fruit juice or herbal tea Use for flavor base
  • 10 drops Liquid monk fruit or stevia Adjust to taste
  • ½ cup Fresh berries optional Crushed or sliced

Instructions

  • Bloom the gelatin
  • In a mixing bowl, sprinkle gelatin over cold water. Let sit 3–4 minutes to bloom.
  • Dissolve the gelatin
  • Pour hot water over bloomed gelatin. Stir until completely dissolved.
  • Flavor and sweeten
  • Add fruit juice or tea, and monk fruit drops. Mix gently and taste to adjust sweetness.
  • Portion into containers
  • Pour into glass jars, ramekins, or silicone molds. Add berries if using.
  • Chill until set
  • Place in refrigerator for 2–3 hours until firm and jiggly.
  • Serve cold
  • Enjoy as a snack or 30 minutes before meals to help manage appetite.

Notes

Great for meal prepping up to 5 days ahead
Use decaf teas for evening snacks
To boost protein further, mix in collagen peptides after dissolving the gelatin
Avoid pineapple or kiwi juice (contains enzymes that prevent setting)
