Ingredients

  • 4 slices sourdough or artisan bread
  • 1 1/2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 2 tbsp butter (softened)

Instructions

  • In a bowl, mix shredded chicken with BBQ sauce until evenly coated and warm slightly if needed.
  • Butter one side of each bread slice.
  • Place one slice of bread butter-side down, add a layer of cheddar and monterey jack cheese.
  • Add BBQ chicken evenly over the cheese layer.
  • Top with another layer of cheese, then place the second slice of bread butter-side up.
  • Cook in a skillet over medium-low heat for 3–4 minutes per side until golden brown and cheese is melted.
  • Remove from heat, let rest for 1–2 minutes, then slice and serve.

Notes

Drain excess BBQ sauce from chicken to avoid sogginess. Use medium-low heat to ensure cheese melts evenly without burning the bread. Let the sandwich rest for 1–2 minutes before slicing for best texture.
