Ingredients

  • 1 lb pre-made pizza dough
  • 2 tbsp olive oil
  • 1/2 cup barbecue sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded gouda cheese
  • 2 cups cooked chicken breast, shredded
  • 1/2 red onion, thinly sliced
  • 1/3 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 2 tbsp bacon bits (optional)

Instructions

  • Preheat oven to 475°F (245°C) with a baking sheet or pizza stone inside.
  • Stretch pizza dough into a 12-inch circle on a floured surface.
  • Brush dough with olive oil and pre-bake for 3–4 minutes.
  • Spread barbecue sauce evenly over the crust, leaving a small border.
  • Sprinkle two-thirds of the cheese over the sauce.
  • Top with chicken and sliced red onion.
  • Add remaining cheese and drizzle a little extra barbecue sauce on top.
  • Bake for 12–15 minutes until crust is golden and cheese is bubbly.
  • Remove from oven and top with cilantro and green onions.
  • Slice and serve warm.

Notes

Pre-bake crust slightly to avoid sogginess. Use a thick BBQ sauce for best texture. Add fresh toppings like cilantro after baking. Store leftovers in an airtight container up to 3 days or freeze slices for up to 1 month.
