Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 0.5 small onion, diced
  • 0.25 cup chopped dill pickles or dill relish
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 2–3 cups frozen tater tots or hash browns
  • Salt and pepper, to taste

Instructions

  • In a large skillet over medium heat, cook the ground beef and onion until fully browned. Drain any grease.
  • In a bowl, mix together the mayonnaise, ketchup, mustard, and a pinch of salt and pepper. Stir in the chopped pickles.
  • Pour half of this sauce into the skillet with the beef and mix well.
  • Transfer the beef mixture to a greased 9×13 baking dish. Sprinkle with shredded cheese.
  • Top with frozen tater tots or hash browns, spreading evenly.
  • Bake at 375°F for 25–30 minutes, or until the topping is golden and crispy.
  • Drizzle remaining sauce over the top and garnish with extra pickles if desired. Serve hot.

Notes

Swap tater tots for hash browns or cauliflower for a low-carb version. Add jalapeños for heat, or bacon for extra flavor. You can prep it a day ahead and bake before serving. Pairs well with salad or roasted vegetables.
