Equipment

  • Mixing bowl
  • Spoon or spatula
  • baking sheets
  • Parchment paper
  • cookie scoop
  • wire cooling rack

Ingredients

  • 1 box cake mix (15–16 oz, any flavor)
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1/2 cup mix-ins (chocolate chips, sprinkles, etc.) (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, combine cake mix, vegetable oil, and eggs.
  • Mix until fully combined into a thick dough.
  • Fold in any desired mix-ins like chocolate chips or sprinkles.
  • Scoop 1-tablespoon portions onto baking sheets, spacing evenly.
  • Bake for 9–11 minutes until edges are set and centers remain soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring.

Notes

Use any 15–16 oz cake mix for different flavors. If cookies spread too much, chill the dough for 30 minutes or reduce oil slightly. For extra moisture, substitute butter for oil or add sour cream. Cookies can be stored for 5 days or frozen up to 3 months.
