Ingredients

  • 2 cups cooked chicken shredded or cubed
  • 3 cups cooked rice white or brown rice
  • 2 cups broccoli florets fresh or thawed frozen
  • 1 can 10.5 oz cream of chicken soup condensed
  • ½ cup sour cream or Greek yogurt
  • cups shredded cheddar cheese divided
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • — — salt and pepper to taste
  • non-stick spray — for baking dish optional

Instructions

  • Preheat oven to 350°F. Grease a 9x13" casserole dish.
  • In a large mixing bowl, combine chicken, cooked rice, broccoli, soup, sour cream, 1 cup of cheese, and seasonings. Mix well.
  • Spread mixture into the prepared dish and top with remaining cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake 10 more minutes, or until bubbly and golden.
  • Let rest 5 minutes before serving.

Notes

For extra creaminess, add ¼ cup milk or broth to the mix.
To freeze, assemble ahead and cover tightly, bake from frozen or thaw overnight.
Pairs well with a green salad or garlic bread.
Try variations like adding bacon, switching cheeses, or using cauliflower rice for low-carb.
