  • 1 Large mixing bowl For combining ingredients
  • 1 Oven preheated to 350°F
  • 1 Foil Optional for baking cover

Ingredients

  • 3 cups Cooked white rice Fresh or leftover works
  • 2 cups Shredded rotisserie chicken Or cooked chicken breast
  • 2 cups Broccoli florets Fresh or thawed from frozen
  • 1 can Cream of chicken soup 10.5 oz or cream of mushroom as sub
  • ½ cup Sour cream Or plain Greek yogurt
  • cups Shredded sharp cheddar cheese Reserve ½ cup for topping
  • ¼ cup Milk Helps keep casserole moist
  • 1 tsp Garlic powder Optional
  • 1 tsp Onion powder Optional
  • to taste Salt and pepper

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, and 1 cup of shredded cheese.
  • Add garlic powder, onion powder, salt, and pepper to taste. Stir until evenly mixed.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Top with remaining cheese, and cover loosely with foil (optional for a softer top).
  • Bake for 25–30 minutes, or until bubbly and heated through.
  • Remove foil during the last 5 minutes to lightly brown the top if desired.
  • Let sit for 5 minutes before serving.

Notes

Swap cream of chicken for cream of mushroom or celery for a twist.
Add extra veggies like mushrooms or spinach for more nutrition.
Freeze leftovers in individual portions for easy reheating.
