Equipment

Ingredients

  • 1 lb Ground beef Lean preferred
  • 1 Taco seasoning packet About 1 oz
  • 1 cup Sour cream Or softened cream cheese
  • 1 can Rotel Or chunky salsa ~10 oz
  • 2 cups Shredded cheddar cheese Or Mexican blend
  • 4 –5 cups Nacho Cheese Doritos Lightly crushed
  • Optional: black beans 1 cup drained
  • Optional: corn ½ cup canned or frozen
  • Optional: diced onions Sauté with beef for extra flavor

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and ½ cup water. Simmer 3–4 minutes until thickened.
  • In a bowl, mix sour cream and Rotel. Add the cooked beef and stir to combine.
  • Crush Doritos lightly into bite-sized pieces.
  • In a greased 9x13 baking dish, layer half the Doritos, the beef mixture, 1 cup of cheese, then remaining Doritos and cheese.
  • Cover loosely with foil and bake for 20 minutes. Remove foil and bake another 5–10 minutes until bubbly.
  • Let rest for 5 minutes before serving. Top with sour cream, green onions, or jalapeños if desired.

Notes

You can prep this dish 1 day in advance, just wait to add the final Doritos layer before baking.
To spice it up, use Flamin’ Hot or Spicy Sweet Chili Doritos.
For a creamy chicken version, swap in rotisserie chicken and cream of chicken soup.
Leftovers reheat best in the oven to restore crunch.
