Ingredients

  • Base Ingredients
  • 2 cups – Cooked chicken – shredded or diced
  • 3 cups – Broccoli florets – fresh or frozen
  • 1 can – Cream of chicken soup
  • 1 cup – Sour cream – or Greek yogurt
  • 1 ½ cups – Shredded cheddar cheese – divided
  • ½ tsp – Garlic powder
  • – Salt and pepper to taste

  • 1 cup – Crushed buttery crackers – for traditional version
  • – OR: Crushed pork rinds keto
  • – OR: Almond flour + grated parmesan low-carb crust

Instructions

  • Preheat oven to 375°F and grease a 9x13" baking dish.
  • Lightly steam broccoli or microwave until just tender. Drain well.
  • In a large bowl, mix cooked chicken, broccoli, soup, sour cream, garlic powder, salt, pepper, and 1 cup of cheese.
  • Spread mixture evenly in prepared baking dish.
  • Top with remaining cheese and your chosen topping (crackers, pork rinds, or almond flour).
  • Bake uncovered for 25–30 minutes or until bubbly and golden.
  • Let rest for 5 minutes before serving.

Notes

For a healthy twist, swap sour cream for Greek yogurt.
To freeze: assemble the casserole, cover tightly, and freeze before or after baking.
Reheats best at 350°F, covered, for 20 minutes.
