Preheat oven to 375°F and grease a 9x13" baking dish.
Lightly steam broccoli or microwave until just tender. Drain well.
In a large bowl, mix cooked chicken, broccoli, soup, sour cream, garlic powder, salt, pepper, and 1 cup of cheese.
Spread mixture evenly in prepared baking dish.
Top with remaining cheese and your chosen topping (crackers, pork rinds, or almond flour).
Bake uncovered for 25–30 minutes or until bubbly and golden.
Let rest for 5 minutes before serving.
