Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (for batter)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1/2 cup heavy cream
  • 2 tbsp rainbow chip sprinkles

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • Melt butter and whisk with sugar until well combined.
  • Add eggs and vanilla, whisking until smooth.
  • In a separate bowl, mix flour, cocoa powder, and salt.
  • Fold dry ingredients into wet mixture until just combined.
  • Stir in chocolate chips, then spread batter evenly in prepared pan.
  • Bake for 20–25 minutes until a toothpick comes out with moist crumbs.
  • Cool brownies completely in the pan before adding topping.
  • Heat heavy cream until simmering, then pour over chocolate chips and let sit.
  • Whisk until smooth, then spread evenly over cooled brownies.
  • Sprinkle rainbow chips on top before ganache sets.
  • Refrigerate for 30 minutes, then slice and serve.

Notes

Do not overbake to maintain a fudgy texture. Allow brownies to cool completely before adding ganache. Refrigerate briefly for clean slices. Store in an airtight container for up to 5 days.
