Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp espresso powder (optional)
  • 1/4 tsp baking powder
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tbsp corn syrup
  • 1/4 cup rainbow chips or mini M&Ms

Instructions

  • Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  • Melt butter in a large bowl, then whisk in sugar until combined.
  • Add eggs one at a time, whisking well after each addition, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, cocoa powder, salt, espresso powder, and baking powder.
  • Gradually fold dry ingredients into wet mixture until just combined.
  • Pour batter into prepared pan and spread evenly.
  • Bake for 25–30 minutes until a toothpick inserted comes out with moist crumbs.
  • Allow brownies to cool completely in the pan.
  • Place chocolate chips in a bowl. Heat cream until just simmering, then pour over chocolate and let sit.
  • Whisk until smooth, then stir in corn syrup.
  • Pour ganache over cooled brownies and spread evenly.
  • Sprinkle rainbow chips on top while ganache is still soft.
  • Refrigerate for 30 minutes until ganache is set, then slice and serve.

Notes

Do not overbake to maintain fudgy texture. Allow brownies to cool completely before adding ganache. Use high-quality chocolate for best flavor. Store in an airtight container for up to 5 days or refrigerate for longer freshness.
