These key lime bars feature a buttery graham cracker crust topped with a creamy, tangy lime filling. Perfectly balanced between sweet and citrusy, they make a refreshing and crowd-pleasing dessert.
Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
Mix graham cracker crumbs, sugar, and melted butter until combined.
Press mixture firmly into the pan and bake for 10 minutes until lightly golden.
In a bowl, whisk eggs and sugar until smooth.
Add lime juice and zest, then whisk in flour until smooth.
Pour filling over warm crust.
Bake for 20–25 minutes until edges are set and center slightly jiggles.
Cool completely, then refrigerate for at least 2 hours.
Lift from pan and slice into bars before serving.
Notes
Use fresh key lime juice for best flavor. Do not overbake—center should still jiggle slightly. Chill at least 2 hours before slicing. Use a hot knife for clean cuts. Store refrigerated up to 5 days.
