Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar (for crust)
  • 6 tbsp unsalted butter, melted
  • 4 large eggs
  • 1 2/3 cups granulated sugar (for filling)
  • 2/3 cup key lime juice
  • 2 tbsp lime zest
  • 1/3 cup all-purpose flour

Instructions

  • Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  • Mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press mixture firmly into the pan and bake for 10 minutes until lightly golden.
  • In a bowl, whisk eggs and sugar until smooth.
  • Add lime juice and zest, then whisk in flour until smooth.
  • Pour filling over warm crust.
  • Bake for 20–25 minutes until edges are set and center slightly jiggles.
  • Cool completely, then refrigerate for at least 2 hours.
  • Lift from pan and slice into bars before serving.

Notes

Use fresh key lime juice for best flavor. Do not overbake—center should still jiggle slightly. Chill at least 2 hours before slicing. Use a hot knife for clean cuts. Store refrigerated up to 5 days.
