Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 3/4 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 cups ripe mangoes, diced
  • 1/3 cup granulated sugar (for filling)
  • 2 tbsp cornstarch
  • 2 tbsp lime juice
  • 1 tsp vanilla extract (for filling)
  • 1/4 tsp salt (for filling)

Instructions

  • Preheat oven to 350°F and line an 8x8-inch pan with parchment paper.
  • Whisk flour, oats, sugars, salt, and baking powder in a bowl.
  • Cut in cold butter until mixture resembles coarse crumbs.
  • Mix in egg and vanilla until combined.
  • Reserve 1 cup for topping and press remaining mixture into pan.
  • Mix cinnamon into reserved topping and set aside.
  • Combine mangoes, sugar, cornstarch, lime juice, vanilla, and salt.
  • Spread mango filling evenly over crust.
  • Sprinkle crumble topping evenly over filling.
  • Bake for 40–45 minutes until golden and bubbly.
  • Cool completely before slicing into bars.

Notes

Use ripe mangoes for best flavor. Drain excess liquid if using frozen fruit. Do not overwork crumble dough. Allow bars to cool completely before slicing. Store airtight up to 2 days or refrigerate up to 5 days. Freeze up to 3 months.
