Ingredients

  • 1 lb lean ground beef (90/10)
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, sliced
  • 1 cup diced tomatoes
  • 1/2 cup kalamata olives, pitted and halved
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, juiced
  • 1/3 cup feta cheese, crumbled

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef and cook until browned, breaking it apart as it cooks.
  • Add diced onion and minced garlic, sauté until fragrant.
  • Add sliced bell peppers and cook until slightly softened.
  • Stir in diced tomatoes, oregano, thyme, red pepper flakes, salt, and black pepper.
  • Let the mixture simmer for about 5 minutes until flavors combine.
  • Stir in olives, lemon juice, and chopped parsley.
  • Remove from heat and top with crumbled feta cheese before serving.

Notes

For best flavor, allow the beef to brown היט before adding other ingredients. Add fresh herbs and lemon juice at the end to preserve brightness. You can substitute ground turkey or plant-based alternatives if desired.
