Ingredients

  • 2 large ripe peaches, peeled and sliced
  • 1 tbsp fresh lemon juice
  • 1-2 tsp sugar, honey, or simple syrup
  • 750 ml chilled Prosecco
  • 6 fresh peach slices for garnish

Instructions

  • Peel and slice the ripe peaches and place them into a blender or food processor.
  • Add the lemon juice and sugar, honey, or simple syrup to the blender.
  • Blend until the mixture becomes smooth and creamy.
  • Taste the puree and adjust sweetness or lemon juice if needed.
  • For a smoother cocktail, strain the puree through a fine-mesh strainer into a small pitcher.
  • Add 2 tablespoons of peach puree into each chilled champagne flute or wine glass.
  • Slowly pour 4 to 5 ounces of chilled Prosecco into each glass.
  • Stir gently once to combine without losing the bubbles.
  • Garnish with fresh peach slices and serve immediately while cold and bubbly.

Notes

Use ripe peaches for the best flavor and chill all ingredients before serving. Strain the puree for a smoother cocktail or leave it rustic for a more casual texture. For a non-alcoholic version, substitute sparkling white grape juice or club soda for the Prosecco.
