Combine warm milk, yeast, and a little sugar. Let sit until foamy.
Mix flour, remaining sugar, and salt in a bowl.
Add yeast mixture, melted butter, egg, and vanilla. Mix into dough.
Knead dough for 5–7 minutes until smooth and elastic.
Cover and let dough rise until doubled in size, about 1 hour.
Mix peaches, brown sugar, cornstarch, cinnamon, nutmeg, and salt.
