Ingredients

  • 1 package sugar-free gelatin (any flavor)
  • 2 cups water (divided)
  • 1/2 cup fresh berries (optional)
  • 2 tbsp sugar-free whipped topping (optional)
  • 1 cup sugar-free whipped topping (for layers)
  • 1/4 tsp vanilla extract (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup zero-calorie sweetener

Instructions

  • Bring 1 cup of water to a boil and dissolve the sugar-free gelatin completely.
  • Add 1 cup of cold water and stir well.
  • Pour into serving cups or molds and refrigerate until firm (about 4 hours).
  • For layered desserts, allow the first layer to partially set before adding a second layer mixed with whipped topping.
  • For creamy variations, blend softened cream cheese, sweetener, and vanilla, then mix with slightly thickened gelatin.
  • Pour mixtures into cups or molds and refrigerate until fully set.
  • Top with fresh berries or whipped topping before serving.

Notes

Allow enough chilling time for proper setting, especially for sugar-free gelatin. Avoid fresh pineapple, kiwi, or papaya as they prevent setting. For clean layers, let each layer partially set before adding the next. Add toppings just before serving.
