These sugar free peanut butter cookies are soft, rich, and naturally sweetened without refined sugar. Made with simple ingredients, they deliver classic peanut butter flavor with a healthier twist.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix peanut butter and sugar substitute until well combined.
Add egg and vanilla extract, then mix until a smooth dough forms.
Stir in salt and optional baking soda until fully incorporated.
Roll dough into 1-inch balls and place on baking sheet, spaced apart.
Press each ball with a fork in a crisscross pattern to flatten slightly.
Bake for 10–12 minutes until edges are lightly golden.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.
Notes
