Ingredients

  • 1 cup natural peanut butter
  • 2/3 cup granulated erythritol or sugar substitute
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/4 tsp baking soda (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix peanut butter and sugar substitute until well combined.
  • Add egg and vanilla extract, then mix until a smooth dough forms.
  • Stir in salt and optional baking soda until fully incorporated.
  • Roll dough into 1-inch balls and place on baking sheet, spaced apart.
  • Press each ball with a fork in a crisscross pattern to flatten slightly.
  • Bake for 10–12 minutes until edges are lightly golden.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.

Notes

Use natural peanut butter for best results. If dough is too dry, add 1-2 teaspoons of oil. Chill dough if cookies spread too much. Do not overbake to keep cookies soft and tender.
